20-Minute Honey Sesame Chicken
This recipe is by Rachael’s Good Eats so HUGE shoutout to her for inspiring this bowl! Her recipes have been staples in my house for years now.
ingredients
2 tbsp avocado or extra virgin olive oil
1/2 cup onion, diced
1/2 tbsp minced garlic
3 large chicken breasts cubed
1/3 cup coconut aminos (or soy sauce)
2 tbsp honey
2 tbsp sesame oil
1/4 cup water
1 tbsp starch powder (arrowroot starch, tapioca starch, cornstarch, etc)
1/2 cup chopped green onion
2 tbsp sesame seeds
instructions
In a shallow bowl or plate, coat the cubed chicken in avocado oil, salt, and pepper
Heat olive oil in a large skillet over medium-high heat
Add onion and garlic to skillet and cook until translucent
Add chicken to the skillet and cook until golden brown and crispy, about 5-7 minutes
While the chicken is cooking, whisk together the soy sauce, honey, garlic, and sesame oil in a small bowl
Once the chicken is cooked, pour the sauce over the chicken in the skillet and toss to coat
Whisk together arrowroot starch and few tbsp water then add mixture to pan. Stir and let sit for 1-2 minutes until thick sauce forms
Serve immediately. Top with sesame seeds and sliced green onions. Pair with rice broccolini/ stir-fry/other veg, edamame, avocado, etc.
