How To Actually Cook Healthy Weeknight Dinners At Home

Even though I love nutrition and cooking, I also frequently experience the feeling of coming home after a long day and wanting nothing to do with cooking. I’m tired and just want to sit on the couch the rest of the night?! On the other hand though, I know well enough at this point that if I order food, or have an unbalanced meal, I am just going to feel more tired and lethargic. Cooking a nutrient-dense meal really does make me feel 10000x better after a long day.

So how do we get from the couch to the kitchen? My approach is having a handful of dinners you’ve mastered cooking in the kitchen. These dinners are easy and healthy. What exactly does easy mean though? My version is a meal that takes little to no effort and is ready in 20-30 minutes (ideally less!). I also want some flavor in there, but I feel the ‘flavor’ favors (dips, dressings, etc.) always seem to take the longest making my easy dinner well… not so easy.
