Farmer’s Breakfast
Who knows if farmers actually eat this for breakfast, but if I were a farmer, I’d imagine this is what I’d eat! Simple eggs, fresh berries, & potatoes…
ingredients
2-3 soft scrambled eggs (optional - add fresh or frozen spinach)
Fresh fruit and veggies
Roasted sweet potato or potato
instructions
Scramble your eggs in a small bowl
Heat a pan over low heat and add a drizzle of olive oil to the pan
Add your eggs to the pan
Cook your eggs LOW and SLOW. This is key to a soft scramble. Watch over your eggs and as the bottom starts to cook, push them to the middle. Do this until your eggs are fully cooked.
Plate your eggs and top them with salt and pepper. Let sit off the pan for 1-3 minutes. This will allow them to solidify more!
Serve with with berries, tomato + feta, and roasted potatoes.
