One-Pot Chickpea Curry

ingredients

  • 1 yellow onion

  • 4 garlic cloves

  • 1 tbsp fresh ginger

  • 2 cans chickpeas drained and rinsed

  • 1 can coconut milk

  • 1 cup low sodium vegetable broth

  • 2 tbsp curry powder

  • 1 tsp cumin

  • 1 tsp salt

  • 1 bunch cilantro chopped

  • 1 lime juiced

  • Rice to serve (I love microwaved @traderjoes Jasmine rice)


instructions

  1. Heat oil over medium high heat in a skillet.

  2. Add onion, garlic, ginger and cook until softened and fragrant. Add chickpeas, coconut milk, broth, and spices.

  3. Stir and let sit on medium high heat until boiling. Once boiling, reduce to a simmer and let sit for 10 minutes.

  4. Turn off heat and add cilantro and lime.

  5. Stir and store in the fridge for ~4-5 days.

  6. I serve mine over rice or in one of my go-to nourish bowls. Enjoy!
