Better Than Your Mom’s Stuffed Peppers

base ingredients

  • 4 red bell peppers cut in half (deseeded and cleaned out)

  • Olive oil

  • .5-1.5 cups of shredded goat cheese

filling ingredients

  • 1 lb ground turkey (can easily omit if desired!)

  • 1 pack taco seasoning

  • 1 can black beans (drained and rinsed)

  • ~2-3 cups brown or jasmine rice cooked

  • 1 cup corn (from canned, frozen, fresh, etc)

  • 1 jalapeño deseeded and diced

  • ~1/3-1/2 chopped cilantro

  • 1 tsp lime zest

  • 1 lime juiced

  • Salt and pepper to taste

instructions

  1. Preheat oven to 450*F. Line cooking tray with parchment paper.

  2. While preheating, place cut bell peppers on tray and drizzle with olive oil.

  3. Start ground turkey mixture. Sauté 1 lb ground turkey on stovetop with ~1tbsp olive oil and taco seasoning until cooked through.

  4. Once oven is preheated, pop bell peppers in oven and cook 10 minutes.

  5. While cooking, prep rest of filling. In a bowl combine all of the filling ingredients (cooked turkey, rice, corn, black beans, jalapeño, cilantro, lime juice and zest, salt + pepper).

  6. For any of these ingredients, you can adjust them to whatever you prefer. for example, I didn’t strictly measure the rice and cilantro, I just eyed it until it was enough for me.

  7. After the first 10 mins in the oven is up, remove and pour out any excess water/liquid from the peppers.

  8. Stuff each pepper until full ~3/4 cup each. Then top each pepper with desired amount of shredded cheese.

  9. Pop back in oven at 450*F for another 10-15 minutes or until cheese is cooked on top.
