Pepita Salsa Slow-Cooker Chicken

You’re probably thinking, “umm chicken with pepita salsa? what?”, but I promise it is SO good! Trader Joe’s carries pepita salsa which essentially has a pumpkin base. If you don’t want pumpkin flavored you can use any other jar of salsa. However, this doesn’t really take like pumpkin rather just creamy salsa! It tastes very similar to chicken tinga.


ingredients

  • 1 jar Trader Joes pepita salsa

  • 1 lb chicken breast

instructions

  1. Lay chicken breast in slow cooker

  2. Pour salsa over chicken breast

  3. Mix together and cover with lid

  4. For slow cooker: 3-4 hours on HIGH or 5-6 hours on LOW. Or cook to 165*F

  5. Once cooked, shred. If you have a hand mixer or stand mixer, USE IT to shred chicken! Best tip to speed up the process.

  6. Use with tacos, burrito bowls, etc!
