Rainbow Edamame Quinoa Salad

Quinoa salads are a go-to recommendation of mine as a dietitian for friends headed back to school. They are an easy way to get in a variety of nutrients, they store well, and are filling. This Rainbow Edamame Quinoa Salad is a vibrant, nutrient-dense meal that’s perfect for a quick and balanced lunch! Quinoa is a protein-packed grain that's also rich in fiber, making it a great base for this salad. Edamame adds even more plant-based protein, along with essential vitamins and minerals like folate and iron. The colorful veggies—cucumber, red bell pepper, and cabbage—are high in antioxidants, vitamins, and fiber to support digestion and overall health. ingredients

  • ½ cup cooked quinoa 

  • ⅓ cup edamame, cooked and shelled

  • ⅓ cup diced cucumber

  • ⅓ cup diced red bell pepper 

  • Handful cabbage or cabbage slaw mix 

  • Toppings: avocado, sesame seeds, asian dressing

instructions

  1. Add all of your ingredients into a storage container. 

  2. Shake or mix the salad until well combined.

  3. Serve with Gimme Seaweed seaweed - scoop spoonfuls of salad into the seaweed paper like chips and dip.
