Summer Stone Fruit Salad
This salad is a crowd pleaser for your summer barbecues, graduation parties, and weekend pool hangouts. It has the perfect sweet hint from the cherries, peaches, and Just Date syrup. Many things can be swapped/omitted in this salad, but I highly suggest keeping the herbs as they taste incredible with the nuts and fruit!
salad ingredients
4-6 cups mixed lettuce, I used spring mix & arugula
1 cup cooked + cooled quinoa
1-2 washed + sliced nectarines or peaches
1/2 cup depitted + halved cherries
1/4 cup pumpkin seeds
1/4 cup pistachios
1/4 cup goat cheese
Freshly chopped mint and thyme, to taste
dressing ingredients
4 tbsp olive oil, I used Graza Drizzle Olive Oil (get $5 off with ‘NUTRITIONBYMAD’)
2 tbsp apple cider vinegar
2 tbsp date syrup, I used Just Date
1 tbsp dijon mustard, I used Wilder
instructions
Add dressing ingredients to a small bowl & whisk until well combined. set aside.
Add all salad ingredients to a bowl. pour as much dressing as desired to salad.
Gently mix until well combined
Plate & enjoy! I enjoyed with others in one sitting.
