High-Protein Egg Bake
Looking for an easy breakfast to prep ahead? Or maybe a high protein breakfast casserole? If so, you must try this simple, classic egg bake! It’s high in protein from the eggs, ground turkey, milk, and cheese. To make this an incredible balanced breakfast, this egg bake has sweet potatoes for a complex carbohydrate, veggies for fiber + antioxidants, and healthy fats!
ingredients
olive oil
1 lb ground turkey (I used 93% lean 7% fat)
2 tsp Italian seasoning
1 tsp garlic powder
1.5 tsp salt
1/2 tsp black pepper
2 medium sweet potato peeled and cut into cubes (~4 cups)
1/2 medium onion diced
1 medium red bell pepper diced
5 cups of loosely packed spinach
12 large eggs
1/2 cup milk (I used almond milk if you want a dairy free option!)
1 cup shredded cheese or your juice (I used goat)
instructions
Preheat the oven to 375 degrees F and get out baking dish (9x13 fits whole serving, for 8x8 dish you can cut recipe in half!) spray/pour oil to coat baking dish
Heat skillet over medium high heat. cook ground turkey and seasonings until fully cooked through ~5 minutes. transfer cooked turkey to baking dish
Add to same skillet the sweet potatoes and cook for 10 minutes. after 10 minutes add onion and bell pepper and cook for additional 5 minutes. then add spinach and 2 tbsp water to cook for about 3 more minutes
Add vegetables to baking dish and spread them out over turkey
Whisk eggs, milk, and a bit more salt and pepper if desired. once whisked add in cheese.
Pour mixture over turkey and veggie mix in the baking tray. Submerge eggs and turkey as much as possible.
Bake for 18-22 minutes or until cooked through (cooking time may vary based on pan size) just cook until there is no more runny egg!
